With over 25 years of experience, I´ve built a life and career around connecting people to places through cuisine, culture, and conversation. As the founder & CEO of Eat & Walkabout, I design and guide luxury tours across Spain and Portugal that go beyond sightseeing, they´re immersive, personal, and rooted in the principles of sustainable travel.
I´m a passionate food and wine expert who believes that travel should be slow and respectful of local communities and traditions. My itineraries are all handcrafted, featuring independent wineries, family-run restaurants, and authentic cultural encounters.

“Eat & Walkabout, my second business founded in 2020, is the 2.0 version of the sustainable, slow food travel experience I always wanted to offer. I created it to bring the focus back to slowing down and truly savouring each moment while travelling.”






Our family business was born from a strong foundation and shared values. I´m not a newcomer to the travel industry, or to the destinations we offer, and I´m incredibly grateful to now pass on that knowledge to my son, Tiernan. Working side by side, we bring our years of experience into every journey, offering a “slow way” style of travel that feels especially meaningful in today´s fast-paced world.

The core standards of Eat & Walkabout are present in every tour and experience we showcase, whether it´s something we personally lead or something offered by our like-minded partners throughout the destinations we know best.


Over the years, I´ve had the opportunity to attend and speak at leading travel trade and industry events across the globe. From presenting our Spain and Portugal tours at major trade shows like WTM, ASTA Global Conventions, and the European Travel Agent Forum, to taking the stage as a panelist at high-profile discussions, I´ve always enjoyed sharing insights from the front lines of slow, sustainable travel.
I`ve spoken on panels at Travel, Food & Wine related events such as the New York Times Travel Show, where I addressed the topic of Focus on Europe: Over-tourism, and at Enojornadas 2020 – Internacionalización en el Enoturismo, discussing the global future of wine tourism, organized by the Institut del Cava.
